    Who doesn't love a healthy meal that is easy to throw together? This meal is 100% vegan, vegetarian, gluten-free, and high protein! It contains all of the essential nutrients in addition to complex carbs to help you recover from a workout or reach your weight loss goals.

    Serves 2


    1 cup of instant brown rice (We used Uncle Ben's)

    1 red bell pepper

    1 cup of kidney beans (We used Goya low sodium kidney beans)

    1 cup of kale 

    2 tablespoons of coconut oil


    Add 1 cup of brown rice to the amount water specified by the package. Turn the heat on high until rice begins to boil, then lower the heat and let it simmer. 

    In a medium size frying pan, add 2 tablespoons of coconut oil and turn heat to medium. Add the chopped bell pepper and let it cook for about 5 minutes. Then, add the kale and beans to the pan and let them cook for an additional 2 minutes. 

    Season the rice any way you wish. We personally used Adobo. Once the rice is seasoned, add the contents of the frying pan to the rice and mix it all together!

    Just like that, in only 15 minutes, you have a flavorful and nutritious meal!
